Detox Chicken Soup

The holidays are brimming with sweet treats: cookies, cakes, and candies galore. Celebratory meals are centered around rich foods: steak, seafood, roast, and more. And parties indulge in alcohol: cocktails, wine, and digestifs too.

After such heavy foods, your body begins to crave fresh. Although we enjoy sugar, protein, and alcohol, our body doesn’t require such huge quantities. When you need a detox or are craving a fresh meal, try this detox chicken soup.

First of all, you’re pooped from partying so you probably don’t feel like cooking. Good thing this is a crockpot meal! It’s also perfect for a crowd, so fill up your crockpot to the max.

Secondly, you need plenty of veggies to recover, and this soup will fuel your body with at least eight different vegetables. Want more variety? Add or swap with mushrooms, potatoes, spinach, zucchini, cabbage, green beans, etc. Don’t hesitate to include pasta, quinoa, white beans, or lentils in your soup either.

Thirdly, bone broth is so restorative! The collagen, vitamins, and minerals from bones work wonders for you body. Use chicken with bones (like wings, legs, or thighs) and simmer the soup all day long, or add in previously cooked bone broth.

And finally, the turmeric packs in the anti-inflammatory properties and a hint of flavor. 

Sprinkle Parmesan cheese on top or your favorite topping. Enjoy with a side salad or homemade biscuits. And feel your body on the verge of recovery!

Simmer this soup in the crockpot to gain a hearty medley of vegetables, the immune system benefits of bone broth, and anti-inflammatory properties of turmeric.

Ingredients

  • 2 chicken breasts, or a whole chicken
  • 1 sweet onion, peeled and sliced
  • 1 red onion, peeled and sliced
  • 3 cloves garlic, peeled and diced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 1 bell pepper, diced
  • 15 mini tomatoes
  • 1 cup spinach
  • 2 small zucchini, diced
  • 2 potatoes, any kind, diced
  • 8 cups broth, any kind
  • 1 tsp turmeric
  • 1 Tbsp Italian herbs, or seasoning of your choice
  • Optional veggies: mushrooms, potatoes, spinach, zucchini, cabbage, green beans, etc.
  • Optional add-ins: pasta, quinoa, white beans, or lentils

Instructions

  1. Add all ingredients to your crockpot.
  2. Cook on high for 4 hours or low for 8 hours.

Notes

Add in your favorite veggies, and remove the ones you're not a fan of. You can't go wrong with flavors when you have bone broth and vegetables mixed together!
