Fun & Healthy Easter Recipe For Kids: Crepe Cookies

Looking for a healthy Easter recipe for kids? You’ve come to the right place! I don’t know about you but I dread Easter because kids get stuck with lots of chocolate that they won’t eat. I have to beg my friends not to buy chocolate for Easter as my kids won’t eat it (and I won’t allow them to eat ALL that sugar). They will jump to the roof day and night for weeks. I still have leftover from last year’s Easter. I hide it in a closet and forgot about it. I figure it is the same with the other kids.

So I try to come up with nice Easter ideas that will please little ones and older ones. I figured some Easter cookies would be a nice addition to their Easter baskets. Who does not love cookies, especially if they are made from homemade crepe batter. A bliss for kids and parents. The trick is got get your child to decorate it. My daughter had a blast doing so. It was one of her best after school activities: decorating these healthy Easter cookies.

Ingredients

  • Basic Batter Recipe
  • Wilton Eyes
  • Wilton decorations (optional). I  did not add any sugar in the batter so I figured it is okay to allow some decorations. Moderation is key
  • Some sprinkles
  • Your favorite berries for decorations
  • Wilton cookie mold for Easter
  • Greek Yogurt

Make it

  • Preheat oven to 350F
  • Grease the cookie mold
  • Scoop in batter recipe
  • Bake for 10 to 15 minutes
  • Let it cool
  • Top with Greek Yogurt. It will allow decorations to stick. It is better than store bought frosting
  • Then let the child decorate the cookies as he or she wishes. Since my daughter is in her girly years, she wanted to have pink decorations.
