Bubble Gum Cupcake Recipe

Ingredients

  • 1/2 cup of heavy whipping cream
  • 1 stick of butter at room temperature
  • 1 1/2 cups of white sugar
  • 2 1/2 cups of cake flour
  • 1 tbs baking powder
  • 1/2 tsp sea salt
  • 1 tsp of vanilla
  • 1 cup whole milk
  • 3 egg whites at room temperature
  • 1 packet of Bubblegum flavoring for frosting


Instructions

  1. Chill the mixing bowl in the freezer for 5 minutes.
  2. Add your whipping cream to your bowl beat your whipping cream until soft peaks form. Scrape it into another bowl and place it in the fridge.
  3. Preheat the oven to 350°F and line 2 cupcake pans with cupcake liner.
  4. Add your butter and sugar to your clean mixing bowl and set your mixer to medium until it’s very creamy, about 5 minutes.
  5. In a separate bowl sift the flour, baking powder and salt.
  6. Whisk together the milk, vanilla and egg whites in another smaller bowl.
  7. Set mixer to medium, and slowly add the milk and flour mixture into your mixer bowl, alternating 1/4 of each at a time until it is all added. Make sure you start and finish with the flour mixture.
  8. Pour the Bubblegum flavor packet into the mixer, and mix until well combined.
  9. Continue mixing on medium for 2 minutes.
  10. Last, fold the whipped cream into the cake batter.
  11. Fill your cupcake liners about 2/3 full, then, bake until a toothpick comes out clean or with a few crumbs. It’s about 15-16 minutes.
  12. Allow the cupcakes to cool thoroughly.

Frosting:

Ingredients

  • 2 sticks of butter at room temperature
  • 8 oz cream cheese at room temperature
  • 4-5 cups powdered sugar
  • 3 tbs heavy cream
  • 2 tsp vanilla
  • Pink food coloring

Instructions

  1. Beat butter and cream cheese until creamy.
  2. Slowly add a cup of powdered sugar at a time.
  3. After about 2-3 cups, add the heavy cream and vanilla.
  4. Once all powdered sugar is added, beat for an additional 5 minutes until light and fluffy.
  5. Remove half of the icing and place in a separate bowl
  6. Add 1 drop of pink food coloring and mix until color is combined
  7. Fill a pastry bag with the frosting
  8. Fill half of it with the white frosting laying on one side then add the oink frosting
  9. Use the big star tip
  10. Frost your cupcakes in a circle motion
  11. Finish with a gumball.
