I discovered my love for all things pumpkin when I was in my early 20s. We were living in Japan at the time and had a friend who owned a French bakery (I know, it seems strange that my first experience with an authentic French bakery would be in Japan!). He used to make these amazing little pumpkin bread things. They were round and maybe about as thick as a hockey puck, and not overly sweet. I was so addicted to those things and haven’t found anything quite like it since moving back home. Those little breads launched a near obsession with pumpkin treats, long before pumpkin spice became the trend that it is today.

While I’ll probably never figure out how to make those bread treats again, I love trying new pumpkin recipes to find treats that are just as yummy. This pumpkin spice cupcake recipe are the perfect way to satisfy your sweet cravings! The cupcake itself is a cross between muffin and cake. It’s definitely denser than your average cupcake, but sweeter than your average muffin. Check out how to make it, then grab the printable recipe!

Pumpkin Spice Cupcake Recipe

Ingredients

  • 1 C + 2 TBSP flour
  • 1/2 tsp cinnamon
  • 1/4 tsp ground nutmegpumpkin-spice-cupcake-recipe
  • 1/4 tsp ground gingerpumpkin-spice-cupcake-recipe
  • 1/4 tsp ground clovespumpkin-spice-cupcake-recipe
  • 1/4 tsp salt
  • 1/2 tbsp baking powder
  • 1/4 tsp baking soda
  • 1/4 C unsalted sweet cream butter, softened
  • 1/2 C sugar
  • 2 TBSP + 2 TSP brown sugar
  • 1 egg, room temp
  • 6 tbsp whole milk
  • 1/2 C pumpkin puree

Frosting ingredients

Cupcake Directions

  1. Preheat oven to 350 degrees and line cupcake pan with cupcake liners
  2. In a large bowl, combine the flour, cinnamon, nutmeg, ginger, cloves, salt, baking soda and baking powder. Using a whisk, mix until combined, set aside.
  3. In a standing mixer, beat until creamy the butter and both sugars.
  4. Add the egg and mix until combined.
  5. Mix in the milk and pumpkin puree until combined
  6. Gradually stir in the flour
  7. Scoop batter into the cupcake liners so they are 3/4 full
  8. Bake for 22 minutes
  9. Once done baking, set aside to cool while you prepare the frosting.

 

Frosting Directions

  1. Using a standing mixer, combine the butter, powder sugar, heavy whipping cream and vanilla
  2. Mix until light and fluffy but stiff
  3. Split the frosting into two bowls, one bowl for the orange color and the other bowl for the green color
  4. Scoop some orange frosting into the piping bag fitted with the #8b tip
  5. Scoop green frosting into the other two piping bags
  6. Take your cooled cupcakes and pipe a glob of orange frosting in the center of the cupcake
  7. Take your #4b piping bag and pipe a ‘stem’ in the middle of the orange on the top
  8. Using the leaf tip, pipe leaves around the edging of the stem.

 

This recipe makes 6-8 cupcakes, depending on how big you make them. If you’re planning a fall party, you might want to double the recipe (or even triple it, if you’ll have a lot of guests).
