I have to tell you, I am CRAZY for pasta. As a pretty picky eater, if you want me to try something new, just put it in a pasta dish and I’m there. Over the last few years, my taste buds have changed a lot and I crave spicy foods like you wouldn’t believe. When I find a way to combine my love of all things pasta with a little bit of zesty spice, you better believe I’m going to try it! This yummy chipotle ranch pasta salad is perfect for weeknight dinners, but it’s a star when it comes to picnics and family BBQs. You can even mix some up ahead of time and take it camping! Chipotle Ranch Pasta Salad Dish Recipe

Ingredients

  • 1 cup sweet onion chopped
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 1 15 oz can black eyed peas drained and rinsed
  • 1 15 oz can black beans drained and rinsed
  • 1 15 oz can corn kernels drained and rinsed
  • 1 cup tomatoes diced
  • 2 large jalapenos diced and seeds removed
  • 1 box elbow macaroni
  • 1 cup of your favorite chipotle ranch salad dressing

How to Make It:

  • Cook the macaroni as directed
  • Place all the ingredients into a large bowl and stir to combine
  • Refrigerate for about two hours before serving.

Like I said, it’s crazy easy! You can buy almost all of the ingredients ready to go, so all you have to do is drain the cans and dump the ingredients into your bowl. If you like cheesy pasta, you can also sprinkle a bit of cheddar on top. Serve with tortilla chips on the side so guests can break them up and add a little crunch to the pasta if they want. Oooh! Or maybe a dollop of sour cream! I bet that would taste yummy, too! Of course, you can never go wrong with eating it as is!
