When you have children signed up for gazillions of extracurricular activities, you don’t have much time for cooking, let alone baking. Between my son’s swim team competitions and my daughter’s hip hop classes & music lessons, I find myself more often in my car than in my kitchen. But kids still need healthy snacks to have energy for the activities and I need those snacks to have enough energy to run them around!
I found the PERFECT easy snacks that are kid-friendly and mom-approved: Peanut Butter Snack Bites. Peanut butter is not only a spread for your toast or a delicious ingredient in your favourite cookies, it is an amazing ingredient in these NO BAKE Peanut Butter Snack Bites.
So let’s get started! It won’t take long!
NO BAKE Peanut Butter Snack Bites
- 1 cup oat large flaked rolled oats
- ½ cup Kraft Smooth Peanut Butter
- ¼ cup honey
- ¼ cup of pitted dates and pistachios
- 2 TBSP of unsweetened shredded coconut
How to Make
- MIX all of the ingredients together in a medium bowl until they are blended
- ROLL the mixture into 20 (1-inch) balls. You’ll use about 2Tbsp. for each ball
- CHILL the Snack Bites in the refrigerator for 20 to 30 minutes
I made this recipe with my daughter when she came home from school. It took us literally 5 minutes to make. The longest part was waiting for the Peanut Butter Snack Bites to chill. She was constantly opening the fridge and checking on them. It was so funny to watch.
While mixing the ingredients, she sneaked some of the mix into her mouth! It reminded me of my childhood when I was helping my own mom in the kitchen. I was always dipping in the dough and she’d give me that look. I found myself doing the same thing: giving her that look and we just burst into a laughter. The mix was too good to resist. It just warmed my heart having those precious moments with my daughter. Precious and unforgettable.
The Peanut Butter Snack Bites lived up to their promise: they are easy to make, delicious and most of all, full of energy. My daughter had some before her hip hop class and she was on fire. My son enjoyed some before his swim practice and he said he had the BEST practice ever.
