Amazingly Yummy Apple Pie Empanadas with Caramel Dipping Sauce Recipe

Get ready to drool! These Apple Pie Empanadas with Caramel Dipping Sauce are the perfect “pocket food” dessert. Sweet and sticky apple pie filling meets a flaky pie crust to make a great hand-held dessert that is perfect to feed a crowd without making a huge mess. Ideal for a grand holiday party or game night. They are also a great after school snack for hungry kiddo as well.

For this recipe, we have used a delicious cooked apple pie filling. Granny Smith apples are cooked in butter with brown sugar and cinnamon to make a sticky filling. The best part is that this pie filling can be made several days in advance. After it is baked in a flaky pie crust, the filling tastes like apple butter! Yumm!!

When prepping for a big party or feeding a crowd, I use all the shortcuts and convenience tools available. So we roll with store bought pie crust. If you make the filling in advance, the empanadas come together in less than half an hour. And in my book, that’s a winner!  These Apple Pie Empanadas are superb on their own, but when you dunk them in the velvety Caramel Sauce, they taste sublime!

Caramel Sauce is a breeze to make. Heat up little cream till just under boiling point. Pour it over a bowl of caramel bites. Let it stand for 5 minutes. The heat from the cream will melt the caramel bites. After 5 minutes, mix it well with a spoon and the ooey gooey Caramel Sauce is ready.

Apple Pie Empanadas with Caramel Dipping Sauce Recipe

Makes: 20 pies (10 pies from each roll)

Ingredients:

For the Empanadas:

  • 1 box of Refrigerated Pie Crust (2 rolls) (I used Pillsbury)
  • 2 cup of Granny Smith Apple, peeled and thinly sliced (about 2 large apples)
  • 1 tablespoon of butter
  • 1 teaspoon of Cinnamon
  • ¼ cup of Dark Brown Sugar
  • 2 tsp of Lemon Juice
  • ¼ tsp of coarse salt
  • ½ cup of water
  • Egg wash (1 egg whisked with 1 Tablespoon water)

For the Caramel Dipping Sauce

Instructions:

  • Preheat the oven to 450 F. Line a baking sheet with parchment paper or Silpat. Keep aside.
  • Melt butter in a large skillet over medium heat and let butter brown to a light golden color.
  • Add the apples into hot butter. Add some salt and let it cook for a couple of minutes.
  • Next, add the brown sugar. Cook and stir apple mixture until apples are softened, about 5 minutes.
  • Mix in cinnamon and water and continue cooking until apples are soft and sticky. About 1 to 2 more minutes. Spread apple filling onto a plate to cool.
  • Unroll the pie dough onto a well-floured surface. Using a 5-inch circular cookie cutter, cut out as many circles as possible. Using a rolling-pin, roll out the scraps and continue to cut out circles until you run out of dough. I got 10 circles from 1 pie dough. Repeat the same with the other pie dough.
  • Spoon 1 tablespoon of the cooled apple filling into the middle of the dough. Moisten edges with egg wash.
  • Fold the dough in half over the filling, forming a half circle, then use your fingers to gently press and seal the edges.
  • Dog-ear one corner of the half circle. Then move along the curved edge and pinch a half-inch of dough next to the dog-ear, stretching it toward you if necessary before folding it back so it overlaps the dog-eared edge. Use your free hand to hold the previous folds in place as you continue to pinch and fold the dough in half-inch sections, slightly overlapping each previous fold, until you reach the opposite corner.
  • If pleating the empanadas feels daunting, use a fork to crimp the edges together. We have done both with our empanadas.
  • Brush each empanada with the egg wash, and make few slits on the top of each empanada with a sharp knife.
  • Refrigerate for 30 minutes.
  • Bake the empanadas for 15 minutes, or until they’re golden brown. Enjoy with the caramel dipping sauce!

For the Caramel Dipping Sauce

  • In a small bowl add the caramel bites.
  • Heat up the cream until simmering. Do not let it boil over
  • Add the hot cream to the caramel bites. Let it sit for 5 minutes. The heat from the cream will melt the caramel bites.
  • Mix it well with a spoon, and there you have it – Caramel Dipping Sauce for your Apple Pie Empanadas!

Tips for pleating the empanadas:

Ok! Let’s be honest, pleating the empanada might seem like a daunting task. But it’s not that difficult. Starting from one corner, you pinch a little bit of dough and fold it over. Keep repeating till you reach the other corner. But I must admit it does require a little bit of practice.

I have a simpler way to do it,  too. Just use a fork to crimp the edges together. I promise nobody will judge you on your empanada pleating skills, as long as you feed them the delicious Apple Pie Empanadas!
