My husband and I are fond of spaghetti squash. It is a great way to eat vegetables and cut back on carbs at the same time. Of course if you want a good spaghetti, go for it because nothing can replace it. But you cannot have spaghetti everyday, can you? On the other hand you can eat spaghetti squash everyday, especially when it is abundant at the farmer’s market.
The downside of eating this vegetable often is that you run out of ideas of preparing it and serving it. When Patak’s Canada challenged me to create a Halloween themed dish and suggested a dip made out of pumpkin, I thought it would be nice to serve my squash in a pumpkin. It will be a great appetizer for this upcoming Thanksgiving dinner or just a fun way to celebrate on Halloween day. After all, eyes eat first.
Creepy Spaghetti Squash Recipe
Ingredients
- 1 Spaghetti squash
- 4 Medium pumpkins (Depending on the number of guests, adjust the number of pumpkins because you will use them as serving bowl)
- 2 to 3 tsp of Patak’s Canada Mild Curry paste
- 2 TBSP of butter
- Salt and pepper to taste
- Halloween decoration
- 1 creepy finger per bowl
Make it
- Heat oven at 350F
- Wash the squash
- Half it
- Add a cooking sheet on a large cooking tray
- Add 1 TBSP on the cooking sheet
- Put the 2 halves of squash face down
- Bake for 30 minutes
- Let it cool
In the meantime:
- Wash the pumpkin and dry it.
- With a large knife, cut off the top of the pumpkin and remove the lid
- Remove the seeds
- Cut off the guts until you have a nice clean surface. Then scrape as much as you can.
- Dry inside off with a towel.
- Heat a large wok. Add the remaining butter
- Scoop the squash in the wok.
- Add the curry paste and stir. Depending on your taste, you can use less or more curry.
- Add salt and pepper to taste.
- Serve in the pumpkin.
Voilà. The presentation was funny, creepy but most importantly, it was delicious. To enjoy a good spaghetti squash, you to season it well. The curry paste mixes well and adds such a nice flavour to the dish. It adds also some colors. Once your gobble this delicious dish, you can use the pumpkin in a delicious roasted pumpkin soup with almonds.

The possibilities are endless to eat those fall vegetables. So head to your local farmer’s market, stock on pumpkins, squash and Patak’s Canada products and impress your guests.
