Greek yogurt has many health benefits. According to Bonnie Taub-Dix, R.D., an 8-ounce cup of Greek yogurt has the same amount of protein as a 3-ounce chicken cutlet. It also has probiotic, which keeps the bacteria in your gut healthy and improves your immune system. If calcium is an issue for you, just bake up a batch of Greek Yogurt Muffins.

Ingredients To Make This Healthy Holiday Recipe: (Recipe inspired from Iogo Recipe book)

  • 1 ½ cups all-purpose flour
  • ½ cup whole wheat flour
  • 2 large eggs
  • ¾ cup plain Greek style yogurt
  • ¾ cup 1% milk
  • ½ cup sugar
  • ½ cup roasted almond, finely chopped
  • ¼ cup poppy seeds
  • 5 tablespoons unsalted butter
  • 2 tablespoons water
  • 1 ¼ tablespoon baking powder
  • 1 tablespoon wheat germ
  • 1 tablespoon baking soda
  • ½ teaspoon salt
  • fine zest of 3 oranges

Directions To Make Green Yogurt Muffins:

  • Put water, zest, and ¼ cup of sugar in a pot and cook over medium heat until sugar is dissolved (approximately 2 minutes.)

  • Add butter and stir until melted, then set aside.
  • In a medium bowl, mix all-purpose and whole wheat flour. Add wheat germ, baking powder, baking soda, almond, poppy seeds, and remaining sugar. Mix well.
  • In a separate bowl, whisk eggs, yogurt, milk, and salt until smooth. Pour the liquid ingredients on the dry ingredients gradually. Stir until you create a soft dough.

  • Place dough in muffin tins or a greased and floured 8.5 x 4.5 inch loaf pan. Bake at 350 degrees Fahrenheit for 50 to 60 minutes.
